Parsnip Recipes

 

Potato Parsnip Latkes

Makes about 16 Latkes, 20 minutes active time, 35 minutes Total

1 large baking Potato peeled and coarsely grated
2 medium parsnips (1lb total) peeled and coarsely grated
1 tblsp lemon juice
1/4 cup flour
2 eggs
3 tblsp finely cut fresh chives
3/4 tsp salt
1/4 tsp pepper
3/4 cup vegetable oil

Preheat oven to 250º. Combine well all the ingredients except the oil in a bowl. Heat the oil in a 12” skillet over moderate heat. Fill a 1/4 cup measure almost full with mixture and carefully spoon it into skillet and flatten to 3” diameter. Repeat to form 3 more Latkes and cook for about 1 1/2 minutes on each side. When done transfer to paper towl to drain and place in oven to keep warm til ready to serve.
